Breakfast is Served!

I read my Super Baby Food last night, and it always reminds me of two things; how unhealthy we eat and how easy it would be to make some healthy changes. I come up with all sorts of excuses - it's too expensive, takes too much time - but then I think about this sweet little face, and how could I not make some changes?

I purchased flaxseed meal a few weeks ago, and I've been adding it to all sorts of things. Two thumbs down when in the Mac and Cheese (it was the visual more than anything), but in the pancakes this morning, no one said a word. I also tossed in some sweet potato puree and a few bananas, and they were so yummy.
I'm adding egg yolk every few days to the baby's lunch as well, and he loves it. Thickens it up some, and he doesn't mind the taste. I'm truly trying to be better about what we eat, especially now that Dave is gone. It would be so easy to survive on fast food and everything premade for the year that he's gone.
Any healthy things that you are able to sneak into your meals? I'd love to know!

Anna loves to feed James. It doesn't always get into the right place, but he doesn't seem to mind.

Hey there!
I have Jessica Seinfeld's book Deceptively Delicious, and have had a great time with that. Now I keep pureed sweet potato, carrot, and a few other things in my freezer and I sneak it into things here and there. My daughter did eat her white bean mac and cheese--she never knew. However, Martina is pretty good at eating mac and cheese that is OR isn't Kraft. As a child, I wouldn't eat that homemade stuff.

The best addition I've tried is adding sweet potato to taco meat. Martina often thinks that the taco meat is too spicy, and the sweetness of the sweet potato (which she hates on its own) tempers it just enough that she eats it without complaining -- and gets a few extra vitamins too!

I've also added some purees (I can't remember if it was sweet potato or carrot) to boxed mac and cheese and she never knew.

Hee hee. I am having loads of fun. They are the only recipes I never post on my blog. Apparently the other person who made a cookbook like that is suing Jessica Seinfeld for copying. I ended up buying both cookbooks and I like Seinfeld's a lot better.

Anyway, because of all that, my husband told me not to reprint any of those recipes in case it gets anyone (including myself) in trouble.

We add flax to a lot of things too. I like it sprinkled on top of my own cereal! I've also ground up cottage cheese and added it to spaghetti sauce for topping on noodles and my kids didn't even notice the difference. Maybe it reminds them of ricotta added to lasagna. Anyhow, it was an added source of protein and calcium!
