Your hubby is leaving for 6-12 months, and you want to give him something special from yourself and the kids. The problem is that you are pretty clueless.
I was thinking along the same lines but want it to be easy to take, survive harsh conditions, and not be "too valuable". I was going to do something from Creative Memories but that may have a hard time with the heat, conditions, and just surviving. I was thinking about scanning things and uploading them to a place like Shutterfly where I can have things bound, etc. I could also order another if one were to get damaged. I just want this to be really special. Something I can add too while he is gone and keep me busy too. Like that will be hard to do! :)

A scrapbook full of pictures of your family and have the kids draw him some pictures to put in it too.

Yep...first thought was a scrapbook. I'll email you an idea of something we did for Doug. He said it was his best gift ever. :o)
I was going to say the same thing--maybe some type of photo collage. You can do more with a scrapbook, so maybe that's the better format.
