Are corn dogs one of the major food groups?

One thing about temporary, single parenthood is that you quickly learn how little kids care about dinner. During my husband's last deployment, I learned that any cooking I did beyond mac & cheese, hot dogs, etc., was simple for my benefit. We lived on chicken dinos, so much so that I have not eaten them in the 4 years since his return.

But here we are again, ready to return to chicken dino land, a place where hot dogs grow on trees, mac and cheese lurks around every corner, and pancakes are served mostly for dinner. Corn dogs want a place on main street, and it's hard to say "no", especially when your kids know how to open the wrapper and pop them in the microwave for 70 seconds.

What I want/need to do is expand my menu so that my children do not suffer from malnutrition, gain an obscene amount of weight, and crave nothing but junk. That's where I'd like to hear from you. What is your favorite, dad is not coming home so we can eat whatever, meal? I'd love to know.

And on that note, we are heading to Ci Ci's Pizza . . .

My husband is pretty easy to please--he's actually happy with those chicken nuggets! I make way too much convenience food because I get home between 5 and 6 on my early nights, and there just isn't time to cook with a husband who is starving when he walks in the door.

But one thing I can do when he's out of town is serve more meatless meals without him asking "isn't there any meat in this?" I'm not a vegetarian, but I don't crave meat ALL the time.

Breakfast for dinner Amy! Good for you, easy, cheap, and filling. Charlie loves it.
